Tomatillo Salsa

Ingredients

  • 1 lb. medium tomatillos, husked and rinsed
  • 1 whole jalapeno
  • 1 small white onion, chopped
  • 4 garlic cloves, unpeeled
  • 1 cup packed fresh cilantro
  • Salt
  • Cucumber slices, for serving

Directions

  1. Cook tomatillos, jalapeno, onion and garlic in a large dry skillet until charred in spots, 8-10 minutes. Peel the garlic. Transfer the vegetables to a food processor and add cilantro; season with salt. Pulse until almost smooth. Serve with cucumber slices.
