Cranberry Nut Bread

Ingredients

  • 1 cup cranberries, chopped
  • 1/2 cup chopped nuts
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 tsp. baking powder
  • 2 Tbsp. shortening
  • 3/4 cup orange juice
  • 1 egg, beaten

Directions

  1. Preheat oven to 350 degrees. Generously grease and lightly flour 9 × 5 × 3-inch loaf pan.

  2. Prepare cranberries and nuts. Set aside.

  3. Mix flour, sugar, soda, salt and baking powder. Cut in shortening. Stir in orange juice and beaten egg until moist.

  4. Fold in berries and nuts. Spoon into prepared pan.

  5. Bake 60 minutes. Cool on rack 15 minutes.
