Chocolate Covered Cherry Cake

Ingredients

  • 1/2 cup butter, softened
  • 2 cups sugar
  • 4 eggs, separated
  • 2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1 cup milk
  • 1 cup chopped walnuts (or pecans)
  • 1 cup chopped maraschino cherries (reserve juice for frosting)
  • Chocolate Cherry Frosting:
  • 1/2 cup butter
  • 3 Tbsp. cocoa
  • 6 Tbsp. maraschino cherry juice
  • 1 tsp. vanilla extract
  • 1 (16 oz. equals 4 cups) box confectioners' sugar

Directions

  1. Preheat oven to 350 degrees. Grease and lightly flour the bottom of a 13 × 9 × 2 inch baking pan.

  2. In large bowl, cream together butter and sugar. Add egg yolks, one at a time, beating well after each.

  3. Stir together the flour and baking powder. Add to creamed mixture, alternately with milk, starting and ending with flour mixture. Stir in nuts and cherries. Beat egg whites until stiff and fold into batter.

  4. Pour into pan and bake for 40 to 45 minutes, or until a toothpick inserted in center of cake comes out clean. While cake bakes, prepare frosting.

  6. Combine butter, cocoa, and cherry juice in medium saucepan. Cook until butter melts. Remove from heat. Stir in vanilla. Add confectioners’ sugar beating until smooth. Pour immediately over warm cake and spread with a spatula. Cool completely.
