Bacon-Wrapped Dates Stuffed with Almonds and Feta

Ingredients

  • 12 slices bacon, cut into halves
  • 24 dates
  • 24 whole raw almonds, unsalted
  • feta cheese crumbles
  • 3 to 4 green onions, chopped
  • 1 cup orange marmalade
  • miso soy paste to make 1/2 cup (or 1/2 cup of soy sauce)

Directions

  1. Preheat oven to 375 degrees.

  2. Slice a pocket into each date an stuff with one almond and a crumble of feta cheese.

  3. Squeeze the stuffed date back together and wrap a bacon slice. Secure with wooden toothpick.

  4. Place on wire rack in an aluminum foil-lined cookie sheet and bake for 20 to 25 minutes, turning once brown each side.

  5. While the dates bake, mix miso soy paste with water (according to package instructions) to make 1/2 cup. Add to marmalade and heat in a small, microwave-safe bowl 1 minute or until blended.

  6. Arrange appetizers on a serving platter. Drizzle with dipping sauce and top with chopped green onions. You can add a sprinkle of extra feta, too.

  7. Serve warm with extra sauce for dipping.
