Bailey’s Veggie Soup

Ingredients

  • 8 strips chicken, about 2 breasts
  • 2 cups water
  • 1 big carrot, peeled and diced
  • 2 red potatoes, peeled and diced
  • cup cooked rice
  • 2 cans (6 oz. each) V8 juice

Directions

  1. Cook chicken in gently simmering water in a large soup pot for 20 to 30 minutes.

  2. Remove chicken strips form water and chop into small pieces. Return to pot with vegetables. Add V8 juice and simmer for 15 minutes. Add the rice3 and simmer 15 minutes longer.
