Baked Apples

Serves 6 people

Ingredients

  • 1 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • (Dash ground cloves, optional)
  • 1/2 cup sugar
  • 6 same-size Granny Smith apples
  • 2 Tbsp. butter, cut into 6 teaspoon size pieces
  • 1 cup apple juice (or water)

Directions

  1. Preheat oven to 325 degrees.

  2. Combine cinnamon, nutmeg, and sugar in a small bowl. Set aside.

  3. Core apples, making sure not to puncture the bottom of the apples so that the juices will remain. Remove skin from 1/2-inch around trop of apples at the opening.

  4. Fill each apple with a tsp. of butter. Place apples in casserole dish and pour apple juice around them. Cover pan with aluminum foil and bake for approximately 45 minutes to 1 hour. Remove from heat; garnish with fresh mint, and serve.

  5. Variations:

  6. Brown Sugar and Nuts:

  7. substitute brown sugar for granulated sugar and add 1/4 cup raisins and 1/4 cup chopped nuts.
  8. With Ice Cream:

  9. Bake apples as directed, then serve with vanilla ice cream and peanut butter sauce:

  10. 1/3 cup peanut butter

  11. 2/3 cup corn syrup

  12. Blend peanut butter and corn syrup together until blended.

  13. Red Hot:

  14. Sprinkle a few red hot candies in each apple before baking, omit cinnamon, cloves, if using,

  15. and nutmeg.
