Easy Shrimp Newburg (Kentucky Twist)

Cook time: 30 minutes
Serves 6 people

Ingredients

  • 7 1/2 cups egg noodles, uncooked
  • 2 tbsps butter or margarine
  • 1/3 cup chopped onion
  • 1 can (10 3/4 oz.) condensed cream of mushroom soup
  • 1/2 cup milk
  • 3 oz cream cheese, cubed and softened
  • 2 tbsp bourbon (optional)
  • 1/2 tsp dried thyme leaves
  • 1 lb fresh shrimp, peeled and deveined
  • 1 cup frozen peas

Directions

  1. In large skillet over medium heat, melt butter, add onion.

  2. Cook 3 minutes.

  3. Add shrimp, cook until barely pink.

  4. Stir in soup, milk, cream cheese, bourbon, thyme, and peas.

  5. Simmer until cream cheese melts, stirring frequently.

  6. Season to taste with salt and pepper.

  7. Meanwhile, cook noodles according to package directions.

  8. Toss hot noodles and sauce.
