Carrot Crunch

A family favorite side dish. Cools off very quickly, so make just before eating.

Serves 4 people

Ingredients

  • 6-8 Carrots
  • 1 1/2 T. Brown Sugar
  • 1 1/2 T. Butter/Margarine (leave out for healthier option)
  • 1 1/2 tsp. orange rind
  • 1/2 tsp. salt
  • 1/4 c. sliced almonds

Directions

  1. Peel and slice carrots (diagonally for fun)

  2. Put carrots, brown sugar, butter (optional), salt and orange rind in sauce pan.

  3. Cook until carrots are still a bit crunchy as they will continue to cook afterwards.

  4. Add almonds just before taking off burner.
