Baked Apple Streusel

Ingredients

  • 1 can (1 lb. 4oz.) unsweetened sliced apples
  • 3 eggs
  • 2 Tbsp. flour
  • 2 Tbsp. skim milk
  • 3 Tbsp. sugar OR Sugar substitute to equal 2 Tbsp. sugar
  • 1/2 tsp. ground cinnamon
  • 1/2 cup sifted all-purpose flour
  • pinch of salt
  • 1 Tbsp. diet margarine
  • 2 Tbsp. sugar

Directions

  1. Drain liquid from apples into a medium bowl. Add eggs, 2 Tbsp. flour, skim milk, 3 Tbsp. sugar, sugar substitute and cinnamon. Whip with a fork until blended.

  2. Arrange apples in a 9-inch non-stick pie plate. Pour egg mixture over apples.

  3. Combine the 1/2 cup flour, salt, diet margarine and the 2 Tbsp. sugar in a bowl; blend with a fork until crumbs form. Sprinkle over apples and egg mixture in pie plate.

  4. Bake in slow oven (325 degrees) 40 minutes, or until mixture is set and topping is lightly browned. Serve warm or chilled.
