Baked Brie with Roasted Peppers

Ingredients

  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 clove garlic, cut in half
  • 1 round (about 1 lb.) brie cheese
  • Baguette slices, plain or toasted

Directions

  1. Cur peppers in half crosswise. Cut 1 or 2 thin slices from each; wrap and chill slices. Set peppers, cut side down, in an 8 to 9 inch wide pan.

  2. Broil 6 inches from heat, turning occasionally, until charred on all sides, about 15 minutes. Cover peppers and let stand until cool. Pull off and discard the skin, seeds and stems, dice peppers.

  3. Rub garlic inside an attractive 9 to 10 inch round or square rimmed baking dish. Spoon diced peppers into dish; top with brie.

  4. Bake brie, uncovered, in a 350 degree oven until it melts at edges and the center is hot and soft, 15 to 20 minutes. Garnish cheese with raw pepper slices. If desired, set cheese on an electric warming tray to keep hot. With a knife or spoon, scoop cheese and roasted peppers onto baguette slices.
