Jamie Oliver Caldo Verde Soup

Ingredients

  • 4 Tbsp olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 4+cups potatoe, diced
  • Sea salt
  • 5 1/3 cup chicken broth (1 tetra pac + water)
  • 2-3 cups kale, chopped
  • 1 Tbsp. oil
  • 2 cooked chorizo sausages (smoked), sliced
  • 2 pinches paprika
  • Pepper

Directions

  1. Prepare all ingredients.

  2. Heat oil, fry onion and garlic for 5 minutes.

  3. Add potatoe, season with sea salt, cook further 5 minutes.

  4. Add broth and simmer for 20 minutes until potatoe is soft.

  5. Blend potatoe into liquid, leaving some chunks.

  6. Add kale and simmer for 5 minutes.

  7. Heat 1 Tbsp oil, medium heat, fry chorizo slices for 3-4 minutes, adding paprika.

  8. Add chorizo to soup.

  9. Top with ground pepper.

  10. Good with corn bread.
