Lasagna Soup

Serves 12 people

Ingredients

  • 1 lb. bulk Italian sausage
  • 2 c onion, chopped
  • 1 c carrot, diced
  • 2 c mushrooms, sliced
  • 2 T garlic, minced
  • 4 c chicken broth
  • 1 can Italian-style stewed tomatoes, chopped (14-1/2 oz.)
  • 1 c mafalda pasta
  • 2 c fresh spinach, chopped
  • 1 c provolone or fresh mozzarella, diced

Directions

  1. Brown sausage in large saucepan over medium-high heat.

  2. Add onion and carrot; saute 3 minutes.

  3. Stir in mushrooms and garlic and saute another 3 minutes.

  4. Add broth and tomatoes, then bring to a boil.

  5. Drop in pasta and simmer until cooked, about 10 minutes.

  6. Stir in spinach and cook until wilted, about 1 minute.

  7. Place 1/4 c diced cheese into each serving bowl and pour soup on top.

  8. Garnish with grated Parmesan and basil if desired.

  9. If you can’t find mafalda pasta, substitute canpenelle or penne pasta.
