Black Bean Burgers

Serves 6 people

Ingredients

  • 1 (15 oz.) can black beans
  • 1 cup Italian-seasoned bread crumbs
  • 1/3 cup chopped onion
  • 1 tsp. paprika
  • 1 tsp. garlic salt
  • 1/2 tsp. cumin seed
  • Salt and ground black pepper, to taste
  • Olive oil, for frying
  • Tossed buns and desired toppings such as lettuce, sliced tomato, sautéed onion and guacamole for serving

Directions

  1. Drain the beans, reserving some of the liquid.

  2. In a food processor, combine the beans, garlic, bread crumbs, onion, paprika, garlic salt, cumin and salt and black pepper. Pulse to form a thick paste. If mixture is dry, add a bit of the reserved bean liquid. The mixture should hold together when pressed. Using your hands, mold into patties.

  3. Drizzle olive oil in a frying pan over medium heat. Cook each patty 4 to 5 minutes per side or until patties are heated through and evenly browned, adding oil as needed to prevent sticking and burning.

  4. Serve on buns with desired toppings.
