Baked Cauliflower Fritters

Ingredients

  • vegetable oil
  • 1 egg
  • 1 Tbsp. milk OR half-and-half
  • 1/4 cup freshly grated or shredded parmesan cheese
  • 1/2 cup Italian-seasoned panko bread crumbs
  • salt and ground black pepper, to taste
  • 1/2 to 1 head cauliflower, separated into florets

Directions

  1. Heat oven to 450 degrees. Coat a baking sheet with vegetable oil.

  2. In a shallow dish, whisk together the egg and milk until mixture is frothy.

  3. In a separate shallow dish combine cheese, panko. salt and pepper.

  4. Dredge cauliflower florets in egg and then roll in the cheese mixture.

  5. Arrange in a single layer on prepared baking sheet. Bake 15 minutes or until coating is crispy and cauliflower is tender. Serve immediately.
