Baked Chicken with Hot Mustard Sauce

Ingredients

  • 1/3 cup evaporated milk
  • 1 Tbsp. soy sauce
  • 1 cup cornflake crumbs
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 broiler-fryer, about 3 lbs., cut up
  • Hot Mustard Sauce:
  • 1/4 cup prepared mustard
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • `/8 tsp. hot pepper sauce
  • 1/2 cup evaporated milk
  • 1 tsp. lemon juice

Directions

  1. In a shallow bowl, mix evaporated milk and soy sauce. In another shallow bowl, mix cornflake crumbs, salt and pepper.

  2. Grease a shallow baking pan. Dip chicken pieces in milk mixture, then roll in crumbs. Arrange in baking pan and bake in in-preheated 350 degree oven 1 hour, or until chicken is tender. Serve with sauce.

  3. Hot Mustard Sauce:

  4. Mix mustard, sugar and salt in saucepan. Stir in pepper sauce and evaporated milk. Heat, stirring until bubbly and heated through. Add lemon juice and serve with chicken.
