Baked Chicken with Leeks

Ingredients

  • 2 whole chickens, 3 to 3 1/2 lbs. each
  • 4 leeks, white part only, cleaned
  • 1 Tbsp. butter, for brushing
  • Salt and fresh-ground black pepper to taste

Directions

  1. Preheat oven to 375 degrees. Tear off eight, 15-inch-long pieces of aluminum foil and lightly butter each one.

  2. Remove the breasts and the thighs from the chickens (reserve the remaining parts of the chicken and carcass for another use.) Place a piece of chicken on one end of each piece of foil.

  3. Cut the leeks into julienne strips and scatter evenly over the chicken pieces. Season to taste with salt and fresh-ground pepper. Fold the top if the foil over the chicken and crimp the edges together to form a tight seal. Place on a large baking sheet and cook in the preheated oven for 20 minutes. (If desired, the breasts can be cooked for 5 minutes less.) Serve immediately.
