Baked Chicken and Rice Barbecue

Ingredients

  • 1 Tbsp. salad oil
  • 3 Lbs. chicken, cut in serving pieces
  • 1/2 cup minced onion
  • 1 cup ketchup
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 3 Tbsp. Worcestershire sauce
  • 2 Tbsp. brown sugar
  • 2 Tbsp. vinegar
  • 1 tsp. prepared mustard
  • 1/2 tsp. salt
  • 3/4 cup raw, regular cooking rice

Directions

  1. In large, heavy saucepan, heat oil. Add chicken; brown well, about 15 minutes. Remove chicken to a 10 × 6 × 2-inch baking dish.

  2. Pour off all but 1 Tbsp. of fat from saucepan. Add onions; saute 5 minutes. Add remaining ingredients. Bring to boiling point. Pour over chicken.

  3. Cover and bake in preheated moderate oven (350 degrees) 30 minutes. Uncover and bake 15 minutes longer.
