Grilled Asparagus Salad

Ingredients

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 2 tbsp. lemon juice
  • 3/4 lb. asparagus, trimmed
  • 6 cups fresh spinach leaves
  • 2 tbsp. grated Parmesan
  • 1 tbsp. slivered or sliced almonds

Directions

  1. Preheat an outdoor grill to medium heat. Combine salt, pepper, oil and lemon juice on a plate. Roll asparagus in oil mixture to coat.

  2. Oil grill grate. Grill asparagus, turning at least once and brushing with oil mixture, until tender, about 5 minutes. Remove from grill and return to plate with oil.

  3. Combine spinach, parmesan, and almonds in a large bowl. Cut asparagus into bite-size pieces. Add asparagus and remaining oil mixture to salad, and toss to combine. Serve immediately.
