Couscous Primavera

Ingredients

  • 2 cups vegetable broth
  • 1 bunch asparagus, trimmed and cut into 1/4-inch pieces
  • 1 cup shelled fresh peas
  • 2 cups dry couscous
  • 1/2 cup chopped green onions
  • 1 jalapeno, seeded and finely diced
  • 1/2 tsp cumin
  • Pinch cayenne pepper
  • 3/4 tsp black pepper
  • 2 tbsp. olive oil
  • 2 tbsp. chopped fresh mint
  • 1 tsp salt

Directions

  1. Bring broth to a boil in a saucepan over high heat, then add asparagus and peas. Reduce heat to medium-low and simmer until asparagus is just tender, about 2 minutes, then remove from heat.

  2. Meanwhile, stir together couscous, green onions, jalapeno, cumin, cayenne, 1/4 tsp black pepper and oil in a large bowl.

  3. Stir couscous mixture into broth mixture, cover tightly, and let stand 10 minutes. Fluff with a fork, then stir in mint, salt, and remaining 1/2 tsp black pepper.
