Baked Chicken Salad

Ingredients

  • 1 cup potato chip crumbs
  • 2 cups diced cooked chicken
  • 1 1/2 cup celery pieces
  • 1/2 cup mayonnaise
  • 1 cup cubed cheddar cheese
  • 1 slice lemon, peeled and seeded
  • 1/2 small onion, cut in half
  • 1/4 cup almonds

Directions

  1. Heat oven to 375 degrees. Grease a 2-quart casserole.

  2. Put mayonnaise, cheese, lemon and onion into blender, cover and process at BLEND until smooth. Remove feeder cup and add almonds, processing only until chopped.

  3. Put chicken and celery into casserole, pour blended mix over chicken and celery and mix. Cover with potato chip crumbs sprinkled on top and bake for 30 minutes.
