Mexican Cucumber Salad

Ingredients

  • 1 medium cucumber, quartered lengthwise, then cut crosswise into 1/4-inch thick pieces
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 1/2 cups grape tomatoes, halved or quartered
  • 1 1/2 cups fresh or thawed frozen corn kernels
  • 2 tbsp. red wine vinegar
  • 1 tsp crushed red pepper
  • 1/4 cup chopped fresh cilantro
  • 1 tsp cumin
  • 1/2 tsp minced garlic
  • 1/2 tsp salt
  • 1/8 tsp black pepper

Directions

  1. Toss together cucumber, bell peppers, tomatoes, corn, and vinegar in a large bowl. Sprinkle with red pepper, cilantro, cumin, garlic, salt and black pepper and toss again. Cover and chill at least 30 minutes or up to 1 day before servings. Toss again just before serving.
