Hawaiian-Style Ahi Poke

Ingredients

  • 1/4 cup soy sauce
  • 2 tbsp. Asian sesame oil
  • 1/3 cup thinly sliced green onions, plus more for garnish
  • 2 tbsp. roasted macadamia nuts, crushed
  • 1 tbsp. coarsely crushed dried wakame
  • 1 to 1/2 tsp grated fresh ginger
  • 1/2 tsp crushed red pepper
  • 1/2 tsp kosher salt
  • 1 lb. sushi-grade ahi tuna, cut into 3/4-inch cubes
  • 3 cups hot, cooked sushi rice
  • 1 cup halved red and yellow cherry tomatoes
  • 3/4 cup cooked shelled edamame
  • 2-3 tbsp. seasoned rice vinegar
  • 1 tsp toasted sesame seeds

Directions

  1. Whisk together soy sauce, sesame oil, green onions, nuts, seaweed, ginger, red pepper, and salt in a bowl. Add tuna and stir to coat. Chill, covered, 2 hours.

  2. Stir tuna mixture. Toss hot rice with tomatoes, edamame, and vinegar in a bowl, then divide among 4 serving bowls and top with tuna mixture. Sprinkle with sesame seeds and garnish with green onions.
