Baked Chicken Supreme

Ingredients

  • 1 (3 Lb.) chicken, cut up
  • 1 envelope (.07 oz.) garlic salad dressing mix
  • 1 1/2 tbsp. all purpose flour
  • 1 tsp. salt
  • 2 Tbsp. lemon juice
  • 1 Tbsp. salad oil
  • 1/2 cup milk
  • 1/2 cup pancake mix

Directions

  1. Wipe chicken parts with paper towels. Set aside.

  2. Combine dressing mix, flour, salt, juice and oil in a bowl. Stir until smooth. Brush evenly over chicken parts. Place chicken in a large bowl. Cover and refrigerate 2 hours, or overnight.

  3. Preheat oven to 375 degrees.

  4. Dip chicken parts in milk, then in pancake mix. Fry in 1/2 inch oil heated to 375 degrees, until lightly browned. Drain on paper towels.

  5. Place chicken parts in a shallow baking pan. Pour half of the remaining milk over chicken. Cover with foil and bake for 30 minutes. Remove foil. Pour remaining milk over chicken. Continue baking for 20 to 30 minutes.
