Baked Chicken with Vegetable Sauce

Ingredients

  • 2 1/2 to 3 lbs. choice chicken pieces
  • 1 1/2 tsp. seasoned salt
  • 1 can (10 3/4 oz.) condensed cream of mushroom soup
  • 1/4 cup half-and-half
  • 2 Tbsp. dry sherry
  • 3/4 cup sliced green onions, including tops
  • 1 can (4 oz.) sliced mushrooms, drained
  • 1 pkg. (10 oz.) frozen green peas, thawed
  • 3 cups hot cooked rice

Directions

  1. Sprinkle chicken with seasoned salt; place skin side up in buttered shallow 2 1/2 quart casserole. Bake, uncovered, at 400 degrees for 30 minutes.

  2. Push chicken to one side. Stir soup, half-and-half and sherry into pan drippings. Rearrange chicken in pan. Sprinkle with green onions and mushrooms. Cover and continue baking 25 minutes. Sprinkle with green onions and mushrooms. Cover and continue baking for 25 minutes. Add peas and cook 5 minutes longer. Serve over beds of fluffy rice.
