Chocolate Peanut Butter Brownies

Ingredients

  • Brownies:
  • 1 cup unsalted butter
  • 1 cup semisweet chocolate morsels
  • 4 large eggs
  • 2 cups sugar
  • 2 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 1 cup flour
  • 1/4 cup unsweetened cocoa powder
  • Frosting:
  • 6 tbsp. unsalted butter, melted
  • 1/3 cup creamy peanut butter
  • 1/4 cup whole milk
  • 2 tsp vanilla extract
  • 2 1/2 cups confectioners' sugar
  • Garnish: chopped peanuts

Directions

  1. Preheat oven to 350. Line a 13×9-inch baking pan with parchment paper or foil, letting excess extent over sides of pan.

  2. For brownies: In large microwavesafe bowl, place butter and chocolate. Microwave on high in 30-second intervals, stirring between each, until mixture is melted and smooth. Let cool to room temp.

  3. Add eggs to chocolate mixture, one at a time, whisking after each addition. Add sugar, vanilla, and salt, stirring well. Stir in flour and cocoa. Pour batter into prepared pan, smoothing top with a spatula. Rinse bowl.

  4. Bake until a wooden pick inserted in center comes out clean, 22-25 minutes. Let cool completely in pan.

  5. For frosting: In same bowl, stir together melted butter, peanut butter, milk, and vanilla until combined. Stir in confectioners’ sugar.

  6. Remove brownies from pan. Pour frosting over brownies, spreading to edges with a spatula. Garnish with peanuts, if desired. Let frosting set for 1 hour. Cut into 2-inch squares. Store in an airtight container for up to 1 week.
