Jerk Chicken with Tropical Couscous

Ingredients

  • 15.25 oz. can mixed tropical fruit
  • 1 lb. chicken breasts, cut into 2x1/2-in. strips
  • 3 tsp Caribbean jerk seasoning
  • 1 tbsp. olive oil
  • 1/2 cup chopped sweet red pepper
  • 1 tbsp. chopped seeded jalapeno
  • 1/3 cup thinly sliced green onions
  • 1 1/2 cups chicken broth
  • 3 tbsp. chopped cilantro, divided
  • 1 tbsp. lime juice
  • 1/4 tsp salt
  • 1 cup uncooked whole wheat couscous

Directions

  1. Drain and chop fruit, reserving 1/4 cup syrup. Toss chicken with jerk seasoning. In a skillet, heat oil over medium-high heat; saute chicken until no longer pink. Remove from pan, reserving drippings.

  2. In same pan, saute peppers and onions in drippings 2 minutes. Add broth, 1 tbsp. cilantro, lime juice, salt, fruit and reserved syrup; bring to a boil. Stir in couscous; reduce heat to low. Top with chicken; cook, covered, until liquid is absorbed. Sprinkle with remaining cilantro.
