Spicy Peanut Chicken and Noodles

Ingredients

  • 1 pkg. frozen broccoli, carrot and sugar snap peas blend
  • 3/4 cup chicken broth
  • 1/3 cup creamy peanut butter
  • 1/4 cup teriyaki
  • 1/4 tsp pepper
  • 1/4 tsp cayenne pepper
  • 1 cup coarsely shredded rotisserie chicken
  • 1 pkg. thick rice noodles
  • 3 green onions, thinly sliced on a diagonal
  • Addition chicken broth

Directions

  1. Microwave frozen vegetables as directed.

  2. Place broth, peanut butter, teriyaki, pepper and cayenne in a large skillet; cook and stir over medium heat until blended. Stir in chicken; heat through. Stir in veggies.

  3. Prepare noodles as directed. Drain and immediately add to chicken mixture, tossing to combine. Sprinkle with green onions. Moisten with additional broth, if needed. Serve immediately.
