Blueberry oat pancakes

I adjusted some of the ingredients because I don’t fully subscribe to the “fat-free ethos.”


Serves 1 people

Categories: breakfast, not tried, pancakes


  • 1/3 cup old fashioned oats
  • 1/4 cup blueberries
  • 3 tbsp. egg whites, or 1 egg
  • 1 tbsp. milk
  • 1 tbsp. cottage cheese or ricotta
  • 1 tbsp. flour
  • 2 tbsp. water
  • pinch salt


  1. Combine all ingredients except for the blueberries and stir until well mixed. Gently fold in blueberries.

  2. In an oiled skillet, drop batter into pan to form 3 pancakes (or 1 big pancake). Once pancakes begin to look solid (about 3 minutes), gently flip. Cook for approximately 3 additional minutes, or until both sides are lightly browned and insides are cooked through.
