Baked Cod Fondue

Ingredients

  • 1 lb. frozen cod fillets, thawed and cut into 1-inch pieces
  • 3 green onions, sliced
  • 1 tsp. salt
  • 1/2 tsp. basil leaves
  • 3 peppercorns
  • 1 bay leaf
  • 1 cup milk
  • 3 Tbsp/. butter or margarine
  • 1 1/2 cups shredded Swiss cheese
  • 1/2 cup unsifted all-purpose flour
  • 1/2 cup dry white wine
  • Paprika
  • toasted bread cubes or bread sticks for dipping

Directions

  1. Place cod, onions, seasonings and milk in 1 1/2 quart glass casseroles. Dot with butter.

  2. Microwave for about 10 minutes, on high or until fish flakes easily (about 140 degrees). Drain poaching liquid into small mixing bowl, remove peppercorns and bay leaf. Sprinkle cheese over fish.

  3. Combine flour and wine in small bowl until smooth; stir into poaching liquid. Pour over cheese and fish.

  4. Microwave for 4 minutes on high. Stir, sprinkle with paprika, and continue cooking for 4 to 5 minutes, on high, or until thickened (about 160 degrees). Let stand 5 minutes before serving.
