Baked Cracker Chicken

Ingredients

  • 6 to 8 chicken breast halves (about 4 lbs.)
  • 1 1/2 cups saltine cracker crumbs
  • 1 tsp. salt
  • 1 1/2 tsp. coarse-ground black pepper
  • 1 tsp. poultry seasoning
  • 1/3 cup margarine OR margarine spray

Directions

  1. Rinse and pat dry chicken pieces, and remove any excess fat. Set aside.

  2. In a medium bowl, combine cracker crumbs, salt pepper and poultry seasoning. Apply margarine to chicken pieces, then roll in cracker mixture. (if not using a spray, melt margarine over low heat. Dip chicken breast in melted margarine then roll in cracker mixture.)

  3. Place on jelly roll pan and bake at 375 degrees for 40 to 50 minutes, until crust is golden brown and juices run clear.
