Baked Eggplant

Ingredients

  • 1 medium eggplant
  • 1/4 cup milk
  • 1/2 cup Italian-seasoned crumbs
  • 1/4 cup butter

Directions

  1. Pare eggplant, 3/4 inch thick. Dip each slice in milk and coat with crumbs.

  2. Melt butter in a shallow baking pan. Place slices in butter, then turn to coat both sides. Bake 20 minutes at 400 degrees.
