Baked Fish with Olive Sauce

Ingredients

  • 1 cup chopped shallots or green onions
  • 2 medium green peppers, diced
  • 1/2 cup olive oil
  • 1 1/2 cups small pimiento-stuffed olives
  • 1 tsp. salt
  • Freshly ground pepper
  • 1 tsp. ground coriander
  • 2 cups orange juice
  • 1/2 cup lemon juice
  • 1 red snapper, or other whole fish (about 4 lbs.), cleaned
  • Shredded lettuce (optional)

Directions

  1. In large skillet, saute shallots and green pepper in oil about 2 minutes (do not brown).

  2. Add olives, seasonings, orange juice and lemon juice. Remove from heat.

  3. Place fish in lightly oiled large shallow roasting pan. Pour olive sauce on top. Bake uncovered in 400 degree oven 45 minutes, or until center of fish flakes easily with a fork. Baste every 15 minutes with sauce.

  4. Place fish on platter; pour sauce on top.
