Baked Fish with Oyster Stuffing

Ingredients

  • 1 (3 lb.) fish, split and boned
  • 6 Tbsp. melted butter or margarine
  • 14 cup chopped onion
  • 1 Tbsp. chopped parsley
  • 2 cups soft bread crumbs
  • 1 cup chopped oysters, drained
  • 3/4 tsp. salt
  • 1/4 tsp. paprika
  • 2 Tbsp. capers
  • 1/2 cup chopped spinach
  • Lemon or lime

Directions

  1. Preheat oven to 325 degrees.

  2. Rinse fish and pat dry.

  3. Melt butter or margarine in skillet. Add remaining ingredients, except lemon or lime. Mix until well blended. Loosely stuff fish with mixture. Place fish in a greased shallow baking dish. Bake for 40 minutes, or until fish flakes easily when tested with a fork. Serve with wedges of lemon or lime.
