Baked Fish Turbot

Serves 6 people

Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 2 cups milk
  • Salt and pepper to taste
  • 2 1/2 cups cooked, flaked fish, (cod or haddock preferably)
  • 1 or 2 Tbsp. white wine, optional
  • 1/2 cup buttered bread crumbs
  • Sprinkling of grated cheese, if desired

Directions

  1. Melt butter in double boiler or saucepan. Add flour, blending smooth over low heat. Add milk and stir until thickened.

  2. Add cooked flaked fish. Season to taste with salt and pepper. (A little white wine or a pinch of basil or marjoram adds subtle flavor.)

  3. Pour into greased casserole and cover with buttered crumbs. Sprinkle with grated cheese, if desired.

  4. Bake in moderate oven (375 degrees) about 30 minutes, or until food is hot and top browned.
