Baked Fish Rolls with Clam Sauce

Ingredients

  • 1 1/2 lb. fresh or thawed frozen fillets of sole
  • 1 tsp. salt
  • 1/4 tsp. white pepper
  • 1 small onion, thinly sliced
  • 2 Tbsp. butter or margarine
  • 1 can condensed Manhattan-style clam chowder
  • 1/2 cup milk
  • 1 Tbsp. dry sherry (optional)
  • 2 Tbsp. packaged bread crumbs
  • 2 Tbsp. shredded Swiss cheese

Directions

  1. Cut fillets lengthwise, sprinkle with salt and pepper. Roll each piece jelly-roll style; fasten with wooden pick.

  2. Saute onion in butter in a large skillet with oven proof handle 3 minutes or until tender. Arrange fish rolls over onion.

  3. Combine soup, milk and sherry in a 2-cup measure; pour over fish.

  4. Bake in a moderate oven (375 degrees) for 15 minutes or until fish flakes easily. Combine bread crumbs and cheese in a small bowl; sprinkle over fish; bake 5 minutes longer.
