“Baked” Ham with Potato Salad

Ingredients

  • 3 lbs. ready-to-eat ham
  • 1 Tbsp. whole cloves
  • 1 cup water
  • 1/4 cup brown sugar
  • 1 onion, sliced
  • 4 slices thick bacon, diced
  • 2 Tbsp. sugar
  • 1 Tbsp. salt
  • 1/4 tsp. seasoned pepper
  • 1 tsp. prepared mustard
  • 1/2 tsp. celery seed
  • 1/3 cup vinegar
  • 1 large onion, chopped
  • 8 large potatoes, peeled and diced

Directions

  1. Score ham fat and stud with cloves. Place on rack in pressure cooker. Combine water and sugar, pour over ham. Add onions. Close cover securely. Place pressure regulator on vent pipe and cook 20 minutes with pressure regulator rocking slowly. Let pressure drop of its own accord. Serve hot or cold.

  2. Heat pressure cooker and brown bacon. Drain, off most of the drippings. Combine remaining ingredients except potatoes and stir into drippings. Add potatoes and mix well. Close cover securely. Place Pressure Regulator on vent pipe and cook 5 minutes with Pressure Regulator rocking slowly. Cool cooker at once. Serve hot or cold.
