Baked Hamburger- Vegetable Chowder

Serves 8 people

Ingredients

  • 1/2 lb. lean ground beef
  • 2 onions, chopped
  • 1/4 cup rice
  • 1 cup diced canned or fresh tomatoes
  • 1/4 cup diced celery
  • 2 carrots, diced
  • 3 small potatoes, peeled and diced
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 4 cups water

Directions

  1. Preheat oven to 350 degrees.

  2. Place beef in a skillet. Cook, stirring with a fork to break up meat, until browned. Add remaining ingredients. Mix until well blended. Spoon mixture into aa 3-quart casserole. Cover. Bake for 1 1/2 hours. or until rice and vegetables are tender. Serve hot in bowls.
