Baked Liver Loaf

Ingredients

  • 1 lb. beef liver
  • 2 cups boiling water
  • 1/4 cup ground salt pork or 2 Tbsp. melted fat or drippings
  • 2 medium onions
  • 1/4 small green pepper, seeds removed
  • 1/2 cup celery, finely cut
  • 1/4 cup chopped parsley
  • 6 slices (3 cups) breads, broken into fine pieces
  • 1 can condensed tomato soup
  • 2 eggs. slightly beaten
  • 1/2 tsp. Worcestershire sauce
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 tsp. poultry seasoning
  • 1/8 tsp. celery salt
  • 2 Tbsp. fat or drippings, additional
  • 2 Tbsp. flour

Directions

  1. Wipe or wash liver, if necessary. Place in boiling water and allow to stand about 10 minutes. Remove liver, save arteries of the liver. Put liver through the food chopper with onions, salt pork, and green pepper. Add to celery, bread pieces and chopped parsley.

  2. Save 1/2 cup of tomato soup for gravy. Add remainder of soup to beaten eggs. Add Worcestershire sauce, salt, pepper, poultry seasoning, celery salt. Combine with dry ingredients. Mix Thoroughly. Add 1 cup stock, or 1 cup water and bouillon cube and 1/2 cup tomato soup. Cook until thickened.
