Caesar Coleslaw

Ingredients

  • 4 cups diced Italian bread
  • 4 tbsp. olive oil, divided
  • Salt and black pepper to taste
  • 1 cup mayo
  • 1/2 cup grated Parmesan
  • 1/2 cup chopped fresh parsley
  • 1/4 cup fresh lemon juice
  • 2 tsp minced fresh garlic
  • 2 tsp anchovy paste
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 bag coleslaw mix

Directions

  1. Toss bread with 2 tbsp. oil and season with salt and pepper. Heat a large nonstick skillet over medium. Add bread and cook until toasted, stirring often, 5 minutes.

  2. Whisk together mayo, Parmesan, parsley, lemon juice, remaining 2 tbsp. oil, garlic, anchovy paste, 3/4 tsp salt and 1/2 tsp pepper for the dressing.

  3. Combine coleslaw mix with dressing. Serve coleslaw with croutons.
