Baked Peaches Italienne

Ingredients

  • 1 (29 oz.) can peach halves
  • 4 ladyfingers, coarsely crumbled (about 2/3 cup)
  • 2 Tbsp. chopped almonds
  • 1 tsp. grated lemon peel
  • 1/2 tsp. almond extract
  • 1/4 cup white wine
  • 1/4 cup packed brown sugar

Directions

  1. Drain peaches, reserve liquid and 1 peach half. Place remaining peach-halves in buttered oven-proof dish.

  2. Puree reserved peach half and combine with crumbled ladyfingers, almonds, lemon peel and extract in small bowl; mix thoroughly. If necessary, add some of the reserved peach liquid to make mixture moist enough to hold together.

  3. Mound mixture into centers of peach halves, drizzle with wine and sprinkle with brown sugar.

  4. Bake at 350 degrees 15 minutes or until peaches are hot and sugar browns on top.
