Baked Potato Skins

Ingredients

  • 6 small baking potatoes, 4 to 5 inches long
  • 1/4 cup butter, melted, divided use
  • 1/4 tsp. paprika
  • pinch freshly ground black pepper

Directions

  1. Heat oven to 400 degrees. Scrub potatoes, pat dry and rub skins lightly with a little of the butter. Pierce potatoes in several pieces with a fork.

  2. Bake potatoes until tender and mealy when pierced, 45 minutes to 1 hour. When cool enough to handle, cut in halves and scoop out potato, leaving a thin shell about 1/8 inch thick. Reserve potato flesh for another purpose.

  3. Place skins on baking sheet. Melt butter in a small pan; add paprika and black pepper; stir. Lightly brush insides of potato skins with butter mixture.

  4. Bake potato skins until crispy and golden, 18 to 20 minutes. Serve hot.
