Baked Quail with Rice

Serves 4 people

Ingredients

  • 8 quail
  • 8 oz. fresh sliced mushrooms
  • 1 stick butter
  • 1 bunch green onion, sliced
  • 1 large pressed garlic clove
  • 1 cup dry white wine
  • 1 Tbsp. lemon juice
  • 1 pkg. wild rice
  • salt
  • pepper

Directions

  1. Preheat the oven to 350 degrees. Wash the quail, and pat dry with a paper towel. Lightly salt and pepper the quail inside and out.

  2. In a heavy skillet, saute the quail in melted butter until golden brown. Place in a seasoned Dutch oven or casserole pan lightly coated with vegetable spray.

  3. Saute mushrooms, green onions and garlic in butter until soft. Add wine and lemon juice to the skillet, stirring well. Add additional salt and pepper to taste. Pour over the quail.

  4. Cover with the lid, and bake 45 minutes, basting as needed to keep the quail moist. Remove the lid and bake 15 more minutes.

  5. While quail is baking, prepare the wild rice according to package directions. If you prefer, mix the wild rice with white rice about one to one.

  6. Serve the quail and sauce over a bed of rice.
