Balsamic Chicken with Plums

Ingredients

  • 2 Tbsp. Kraft Balsamic Vinaigrette Dressing, divided
  • 2 plums, sliced
  • 3 Tbsp. minced shallots
  • 4 small boneless skinless chicken breasts (1 lb.)
  • 1/2 tsp. salt-free seasoning blend
  • 1/2 cup fat-free reduced -sodium chicken broth
  • 2 tsp. Grey Poupon Savory Honey Mustard
  • 1 tsp. chopped fresh rosemary

Directions

  1. Heat 1 Tbsp. dressing in large skillet on medium heat. Add plums and shallots. Cook 5 to 6 minutes or until tender, stirring frequently. Spoon plum mixture into bowl, cover to keep warm.

  2. Spray skillet with cooking spray. Add chicken, sprinkle with seasoning blend. Cook 6 to 7 minutes on each side or until done (165 degrees). Remove chicken from skillet, cover to keep warm.

  3. Mix chicken broth, mustard, rosemary and remaining dressing in skillet until blended, cook 2 to 3 minutes or until slightly thickened, stirring frequently.

  4. Serve chicken topped with plum mixture and mustard sauce.
