Watermelon Gazpacho

Serves 4 people

Ingredients

  • 1/2 cup Kraft Zesty Lime Vinaigrette Dressing
  • 4 cups chopped seedless watermelon
  • 1 clove garlic
  • 1 1/2 cups chopped English cucumbers, divided
  • 1/4 cup Athenos Traditional Crumbles Feta cheese
  • 1/4 cup Planters Sliced almonds, toasted

Directions

  1. Blend dressing, watermelon, garlic and 1 1/2 cups cucumbers in blender until smooth; pour into large bowl.

  2. Refrigerate 1 hour. Meanwhile, finely chop remaining cucumbers; refrigerate until ready to use.

  3. Serve watermelon mixture topped with chopped cucumbers, cheese and nuts.
