Baked Salmon Croquettes

Ingredients

  • 1 lb. can pink salmon
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1 Tbsp. lemon juice
  • 1/2 cup oatmeal
  • 2 egg whites, slightly beaten
  • 1/2 cup skim milk
  • 1/2 cup chopped onion, or more to taste
  • 1/2 cup crushed unsalted crackers
  • 1/2 cup cornmeal

Directions

  1. Heat oven to 375 degrees. Remove skin and bone from salmon, flake. Add remaining ingredients (except cornmeal) and mix well.

  2. Divide mixture into 6 patties. Roll each patty in cornmeal. Put in 6 muffin tins, sprayed with Pam. Bake at 375 degrees for 30 to 35 minutes or until golden brown. Remove from muffin tins and serve warm.
