Baked Salmon with Lentils and Asparagus

Ingredients

  • 1/2 cup sliced carrots
  • 8 steamed asparagus spears
  • 1 Tbsp. lemon juice
  • 1/2 tsp. olive oil
  • 1/3 cup cooked lentils
  • 4 oz. salmon
  • 1 Tbsp. lemon juice
  • 1/4 tsp. dried dill

Directions

  1. Mix carrots with cooked lentils. Mix lemon juice and olive oil, and drizzle over asparagus.

  2. Drizzle salmon with remaining lemon juice and sprinkle with dried dill. Wrap in foil and bake at 350 degrees for 30 minutes or until flaky.

  3. Move salmon aside, and place carrots with lentils and asparagus on either side of fish. Bake uncovered for about 5 minutes more, to warm vegetables.
