Peanut Butter-Jam Bars

Ingredients

  • 3/4 cup butter, softened
  • 1/2 cup creamy peanut butter
  • 1 1/2 cups packed brown sugar
  • 1 tsp. vanilla
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 1/4 cups quick-cooking rolled oats
  • 2 cups all-purpose flour
  • 1 12 oz. jar seedless blackberry, raspberry or strawberry jam
  • 1 cup chocolate-covered peanuts, coarsely chopped

Directions

  1. Preheat oven to 375 degrees. Line a 13 × 9-inch baking pan 2ith foil, extending foil over edges of pan. Lightly grease foil.

  2. For crust, in a large bowl beat butter and peanut butter with a mixer on medium to high 30 seconds. Add brown sugar, vanilla, baking soda, and salt. Beat until combined, scraping sides of bowl occasionally. Beat in oats. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour (mixture will be crumbly). Remove 2 cups for topping. Press remaining mixture into prepared baking pan.

  3. In a bowl stir jam until smooth. Carefully spread jam over crust to within 1 inch of the edges. Sprinkle with reserved oat mixture and chocolate covered peanuts.

  4. Bake 25 to 30 minutes or until jam is bubbly and topping is golden. Cool in pan on wire rack. Using edges of foil, lift uncut bars out of pan. Cut into bars.
