Baked, Stuffed Acorn Squash

Ingredients

  • 3 large acorn squash, split, seeds removed
  • 2 Tbsp. butter or margarine
  • 6 slices bread, broke into fine pieces (3 cups well packed)
  • 1 cup milk or stock
  • 1 1/2 cups chopped, cooked, liver, kidney, heart or combination of same
  • 1/4 cup finely chopped celery
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 3/4 tsp. poultry seasoning

Directions

  1. Sprinkle acorn squash with salt and pepper. Put 1 Tbsp. water and small piece of butter or margarine in each half of squash. Place in shallow baking pan. Add hot water to cover bottom of the pan. Bake in moderate oven (350 degrees), approximately 40 minutes.

  2. While this is baking, mix remaining ingredients. At end of 40 minutes, remove squash from oven and fill cavities with dressing. Return to oven and bake 20 minutes longer or until squash is soft when tried with a fork. Total baking time about 1 hour.
