Baked Stuffed Fish

Ingredients

  • 1 3 lb. fish
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 medium onion, chopped
  • 1/2 cup deiced celery
  • 1 cup sliced mushrooms
  • 1/2 cup melted butter
  • 2 cup soft bread crumbs
  • 2 Tbsp. chopped parsley
  • 1/4 tsp. savory seasoning
  • 1 Tbsp. water
  • Flour Paprika

Directions

  1. Sprinkle fish lightly inside and outside with salt and pepper. Cook onion, celery and mushrooms in butter until tender.

  2. Combine with remaining ingredients except flour and paprika. Fill fish cavity with stuffing. Sew opening together with a needle and coarse thread. Brush fish generously with additional soft butter or oil; coat with flour.

  3. Sprinkle with paprika. Cut 3 or 4 gashes in skin on both sides of the fish to prevent cracking. Place fish in a pan lined with aluminum foil that has been greased.

  4. Place fish in a pan lined with aluminum foil that has been greased. Bake at 450 degrees for 10 minutes per inch of stuffed thickness. Baste several times with a mixture of 2 parts of water and one part of butter or oil.

  5. Place fish on a hot platter; remove thread. Garnish with sprigs of parsley and lemon slices, if desired.
