Baked Stuffed Kidneys

Ingredients

  • 4 large lamb kidneys
  • 1/4 cup chopped nuts
  • 2 Tbsp. fat
  • 3/4 cup chopped, cooked prunes
  • 4 slices (2 cups) bread or wheat bread broken into fine pieces
  • 1 egg, beaten
  • # Tbsp. prune juice
  • 1/4 tsp. salt
  • Dash pepper
  • 1 strip bacon or fat salt pork cut into 12 small strips

Directions

  1. Split kidneys and remove fat and tubes. Wash and drain thoroughly.

  2. Brown nut meat in fat. Add remaining ingredients, except bacon or fat salt pork, and mix thoroughly.

  3. Place kidneys, cut side up, in well greased shallow baking dish. Sprinkle with salt and pepper. Cover each with 1 piece of bacon or salt pork. Place in hot oven (400 degrees) and bake uncovered for 20 minutes.

  4. Variations: Use raisins, dried figs, or other dried fruit- in place of, or in combination with, prunes. Veal or pork kidneys may be used instead of lamb. Use any other stuffing in place of fruit stuffing.8
